Mais pour les log, c'est quoi les commandes ?

Je me suis contenté d'indiquer les fichiers d'erreurs (cf directive error_log ainsi que access_log). Il y a d'autres moyens (commande tail etc) pour voir leur contenu.
Toutefois, juste il faut penser à l'avenir d'avoir le réflexe d'utiliser la recherche (ou un moteur de recherche). Parfois, il arrive qu'un sujet soit récurrent, celui-ci en soit est un exemple parfait.

Le cat de /var/log/nginx/rutorrent-error.log est beaucoup trop long, je peux pas le copier coller...

Je comprends, aucun problème.
Le mieux serait éventuellement d'arrêter Nginx, de vider le fichier et ensuite de le (re)démarrer. Les erreurs seront automatiquement renseignées. Il suffira d'essayer d'accéder à ruTorrent (etc). Y procéder un (seul) à la fois. Ainsi, le fichier n'aura que les errreurs du moment présent.
Autrement, les dernières lignes, les plus récentes (cf la date et l'heure) sont les plus adéquate pour nous éclairer. La commande tail retourne bien les dernières mais c'est tout ? J'ai pas l'impression...
Déjà, l'erreur PHP se résout aisément.

nano /etc/php5/fpm/php.ini

Il faut définir le date.timezone comme ceci (par exemple) :

date.timezone = Europe/Paris

Le changement prendra effet avec le redémarrage de PHP5-FPM :

service php5-fpm restart

Malheureusement, je ne serais le dire... Je n'ai jamais mis en place un cache FastCGI. En plus, oui il se pourrait que ce soit autre chose.

Oui j'imagine, parfois c'est la cause du problème. Toutefois, il semblerait que ceci soit configurable (cf la directive fastcgi_cache_purge.
